Tim Berners-Lee created the Internet (sorry Al Gore) to facilitate sharing and updating information among researchers. Damien uses it to show off the pappardelle bolognese he made for dinner last night. That’s what you get when you cross a digital guy with a foodie living in New Orleans.

Coming to us from our nation’s Capital, Damien has done tours with some very progressive digital firms. He spent three years crafting Pollie Award-winning online campaigns as the New Media Director for D.C. based public affairs firm Adfero Group. What’s a Pollie? Think Oscars for politics but replace Vera Wang gowns with pants suits from Sears. He got his start with renowned political consultant Joe Slade White as a media planner devising media strategies for political and corporate clients, including then Senator Joe Biden and AT&T.

At Morgan & Co Damien brings fresh ideas to digital media strategies that allow our clients to effectively communicate with their audiences in the virtual world. His bag of tricks includes rich media, behavioral, contextual and semantic targeting, along with social media and search engine marketing.

Having lived in New Orleans for a few years now he has fallen in line with the rest of us in appreciating the food and festivals the area has to offer…so much so that his complaining that we don’t have a decent chicken wing place or a hockey team (like his beloved home of Buffalo, NY) has waned in recent months. He is the co-Founder of Net2NO and is a Board Member for both the American Marketing Association and American Advertising Federation’s New Orleans Chapters. He received a Master’s in Political Management from George Washington University (“GW” to those inside the Beltway) and a B.A. in Political Science and in History from Canisius College.

We live in a city that boasts some of the finest eats, from French classics to creole-Italian cuisine. And yet, I cannot find a decent Buffalo Wing. So I have resorted to making them myself and if you are lucky enough to be reading this it means you too will now know the secret to making REAL Buffalo Wings.

  1. Bad chicken = bad wings. Buy Grade A whole chicken wings – the bigger the better – not “wingettes” and NEVER frozen!
  2. Thoroughly wash and pat dry. The dryer the better before you throw them in the oil.
  3. Speaking of oil, Peanut works the best, Canola ok, vegetable in a pinch.
  4. Heat the oil to 375 degrees. A home fryer keeps the temp more consistent but a pot with a thermometer works too.
  5. Do not over crowd the pot/fryer. The more little chics you throw in the more it lowers the core oil temp creating a more uneven fry.
  6. 6-8 minutes per batch should do the job. A nice golden brown. Over-frying will give you a dry tasteless wing.
  7. Now for the sauce! Get yourself some Franks Red Hot. Sorry Mr. Mcllhenny but for true Buffalo Wing’s nothing else has the same balance.
  8. Next you’ll need melted clarified butter (unsalted), a few teaspoons of honey, and a teaspoon of Apple Cider Vinegar.
  9. General rule of thumb: 3 parts Franks hot sauce to 2 parts melted butter for “Medium” sauce. Add a dash of ACV and honey to taste.
  10. Toss the warm sauce in a large bowl with the hot wings. Serve and watch the magic.
